Hot & Sour Crab Soup
Ingredients:
2 shallots, finely chopped
2 garlic cloves, crushed
2 tbsp. fresh grated ginger
3 red bird’s eye chilies, seeded and finely chopped
1 tbsp. sweet chili sauce
Zest of one lime
5 cups fish or vegetable stock
2 tsp. brown sugar
Juice of one lime
1 tsp. Thai fish sauce
2 6 oz. cans white crab meat
5 scallions, sliced
Handful fresh cilantro leaves
Instructions:
Put the shallots, garlic, ginger, chopped chilies, chili sauce, lime zest and stock in a large saucepan. Boil, reduce heat, cover, and simmer for 20 minutes.
Strain the stock into clean pan and stir in the sugar, lime juice, and fish sauce, then add the crabmeat. Serve sprinkled with sliced scallions and cilantro leaves.
