Cream of Onion Soup with Chives and Croutons
Ingredients:
2 tbsp. olive oil
3 onions, chopped
2 garlic cloves, crushed
1 medium potato, diced
¾ cup half and half
2 tbsp. chopped chives
Salt and pepper to taste

Instructions:
Heat the oil in a large saucepan, then cook the onion for about 20 minutes. Add the potato and stir in the stock. Boil, reduce heat, cover, and simmer for 10 minutes, or until potato is tender.
Process the soup in a food processor or blender until smooth. Return to a pan, stir in the cream, chives, salt and pepper. Serve with sprinkled chives.
